Giada is the Best

Hello All! Happy (rainy) Tuesday. It’s pouring rain and I got stuck in it on my way back from lunch. A great day to wear a white sweater, huh?

Yesterday was a rest day and I’ve noticed that I definitely use these days to my advantage. I came from work last night, watched Married to Jonas , completed a pilates DVD and read my US Weekly. It was glorious!

Now, let’s dig into what I ate yesterday.

BREAKFAST – Breakfast yesterday came together quickly thanks to some prep the night before.  I had some overnight oats, made with old fashioned rolled oats, 1% organic milk, chia seeds, peanut butter and cinnamon.  Oh so good!

I should have added a little mor milk to the mix because it was a little crunchy, but I was able to devour the whole thing.  I also had a banana on the side.

I plugged away at work for the remainder of the morning, and then went to a local grocery store, Busch’s, with a co-worker.  I love this grocery store because they offer free coffee and doughnut holes to customers.  Even though I didn’t buy anything, I took part in the doughnut holes!  (Well, only 1)!

When I came back to the office, I was more than ready for my sandwich!

LUNCH – I had a salami sandwich on wheat bread and 1 tsp of light mayo.  Now, I realize this isn’t the healthiest of lunches, but the man likes salami and I don’t want it to go to waste.

The sandwich didn’t keep me full for very long and I was pretty much starving by the time I got home.  I snacked on some kettle chips while I cleaned out the DVR.  These held me over until it was time to make dinner!

DINNER – I have to give a huge shout out to Giada for her unbelieveable Weeknights with Giada cookbook.  Not only are the photos goregous in this cookbook, every single recipe seems delicious and doesn’t take a lot of time, making for great meals on weeknights (hence the name).

I found a recipe for carmelized onion, sausage and basil pizza and used that last night!

The pizza didn’t take too long, thanks to the store-bought pizza dough.  Cooking the onions took the longest time – 25 minutes total – but while those were cooking, I made the sausage on the stove.  The recipe calls for gorgonzola or blue cheese, but the man doesn’ t like those, so I substituted mozzarella.  It was oh so delicious.

I had 2 pieces of pizza and a side salad with spinach, cherry tomatoes and ranch dressing.  It was so good.  And there’s nothing like some candlelight to add some romance to a Monday!

I Am Not a Morning Person

Oh man!  I am not a morning person.  Some mornings, I try to tell myself that I will wake up early in the morning to go to the gym, and I always pull the covers over my eyes and sleep for 10 more minutes.  (Who am I kidding?  It’s more like another hour.)

I did this yesterday.  I told myself to get up early so I could go to the gym for a 3 mile run since that’s what was on the training schedule.  I knew I wouldn’t do it at night because the man and I met with a priest last night for marriage prep.  (I’ll have a write-up on how that went later!)

Well…the snooze happened and I didn’t work out.  Oopssssieeee….Oh well, I don’t think a 3 mile run will make or break me.  And we had a therapy session yesterday, so that counts for something, right?

BREAKFAST – I worked out of a different office yesterday because it was closer to our meeting (oh the perks of sales).  I don’t necessarily feel as comfortable in that office because it’s much bigger and I don’t know as many people, but it was super quiet there so I got a lot of stuff done!  Like….eating my favorite Kashi bar for breakfast!  I also had a large hazelnut coffee from Panera which might explain why I got so much finished.  #caffeine

The plus side of this other office is that it’s about 5 minutes from home!  I swung home for some lunch, putting clothes away and some TV watching.  It was glorious!

LUNCH – I ate a salad with organic baby romaine lettuce, shredded carrots, cheddar cheese and some ranch dressing.  On the side, I had an apple with peanut butter.  Delicious!

After work, I drove over to the church to meet with the priest.  It was our first meeting with him and he was a nice young man.  It was actually my first time every talking directly to the priest outside of, “Amen,” at communion.

Our meeting left us a little bewildered and, honestly, a little confused…so we solved it by:

DINNER – PIZZA!!!!!  I had 3 of those pizzas.  It was amazing and hit the spot.

It was a pretty balanced day, so I’m pleased with it.
