Running During the Week?

This Friday has been absolutely gorgeous.  The weather is great, I’m working from home and the man and I are actually in the state of MI this weekend for the only weekend in May!  It’s been crazy.

Let’s just jump right into what I ate/how I exercised this week, shall we?

WEDNESDAY – Hump day was pretty good day.  The weather was great, work was good and I ate ice cream.  What else can you want for a Wednesday?

BREAKFAST – The day started off with a banana.  Have you seen this video?  It is hilarious.

LUNCH – LEFTOVERS!  I must say that these enchiladas are super good.

I am lucky enough to have the option to work out of different offices or from home with my current job.  I go into the office where my boss is located mostly on Mondays (because I have a meeting with him) and then tend to work from another office that is closer to my apartment (literally 6 minutes) most other days.  The great thing is, I got to go home for lunch!  I watched some Watch What Happens Live as I ate these babies!

SNACK – I mentioned this cake on my What I’m Loving Wednesday post, but it’s worth mentioning again.  It was someone’s birthday in the office, so that meant, CAKE.  The cake I chose was a Sander’s Bumpy Cake.  I’ve never heard of it, which is apparently a crime for anyone living in Michigan, but I’m new here!!  But, it was definitely worth the wait.  The bumpy cake is basically a Devil’s food cake with butter cream bumps and fudge frosting.  #amazeballs I also had a side of mint chocolate chip ice cream!

And when I came home, I snacked on some strawberries on the balcony.

EXERCISE – I ran 5 miles outside and it was wonderful.  The weather was gorgeous and I kept an 11 minute mile pace.  Job well done!

DINNER – A quick meal in the form of whole wheat rontini, broccoli and my mom’s spaghetti sauce.  SO DELICIOUS!

THURSDAY – Yesterday was great because it ended with a wonderful happy hour with co-workers at a sushi bar, Ronin.  But first.

BREAKFAST – Another banana.  I just love these!

SNACK – A lunchtime trip to Whole Foods.  I love this place with my whole heart……did you catch that?

LUNCH – Leftovers from dinner.  Quite yummy.

DINNER – I am a sucker for sushi.  The man doesn’t love it, so when co-workers want to go, I’m more than game

It started with a glass of pinot grigio (I had 2 glasses) and edammae.  Both delicious.

I shared some rolls, but I mostly stuck with my roll – a Shinto roll, which consisted of lettuce, carrots, avocado, mango and shrimp.  Amazing!!

And since someone else wanted dessert…I obliged.  Fried Oreo’s and some ice cream!  Sign me up!

So that was my past 2 days.  I know I had ice cream twice and a cookie, but, I need some chocolate in my life.  I just can’t get rid of it.  I’d rather give up salt than chocolate.  EVERY TIME.  And I ran 5 miles.  This is why I run.  It’s all about balance, I must say.

Tasty Thursday {on a Friday}

Hi Everyone!  Happy Friday!

I’m sorry that this is coming late, but I definitely want to share a recipe that I will be trying this weekend!

For this Tasty Thursday, I would like to share this recipe from Bethenny Frankel.

Whether you love her or hate her, you have to admit that Bethenny knows what she’s doing from a PR and product development perspective.  I have read her book, Naturally Thin, and I have her yoga DVD’s, so I’m definitely a fan!

She has an article in Health Magazine and she shared a recipe for a breakfast frittata that sounds amazing!

The recipe calls for:

  • 1 cup sauteed veggies (I’ll probably use broccoli, onions, spinach and tomatoes)
  • 1 egg yolk and 3-4 egg whites
  • Salt and pepper to taste
  • 1 tablespoon parmesan cheese

(I love recipes that don’t have too many ingredients!!)

Then:

  1. Heat the oven to 350 degrees and spray a nonstick pan with cooking spray and saute the veggies.
  2. In a small bowl, whisk together the egg yolk and the egg whites with a little salt and pepper. Pour the egg mixture into the pan and move it around with a spatula until slightly solidified. Transfer the pan to the oven
  3. Bake until the frittata is almost firm to the touch (approximately 15-20 minutes). Sprinkle with the cheese and bake until firm. Serve immediately.

The man and I have a plan that on Sunday we’ll enjoy a delicious breakfast on our balcony (complete with mimosas) and I hope to make this frittata.  I’ll be sure to share our thoughts!

Blenders are Fun

I can’t believe Tuesday is over!  It was a fairly busy day, but I had cramps so bad I couldn’t work out.  I know that working out when you have cramps is actually supposed to help, but I just wanted to sit in a ball on the couch and watch the New Girl season finale.  Did you watch?  It was hilarious!!  I won’t spoil it for you!

But, let’s review yesterday’s eats.  I must say that I am very pleased with yesterday and I have noticed that my stomach is getting flatter and a little tighter thanks to reducing sugar and running.

BREAKFAST – I love when breakfasts are quick, especially thanks to preparations from the night before.  I made a smoothie the night before.

Into the smoothie went:

  • 2 handfuls of spinach
  • Almond Milk
  • Frozen Blueberries
  • Frozen Strawberries
  • Vanilla Greek yogurt

It was quite thick, but good.  I think I need to add more frozen fruit next time.  I also had hazelnut coffee with almond milk and 2 packets of Truvia.

LUNCH – I had a hodge podge of snacks for lunch because nothing sounded good.  So…I had:

I had some Angie’s Popcorn in salted carmel and it was a free sample from Whole Foods.  It was delicious!  I must say that I’m not usually a fan of kettle corn, but this was absolutely delicious.  I’ll probably purchase myself.  According to Angie’s Popcorn‘s web site, the popcorn is popped in Mankato, Minnesota.  Incidentally, one of my BFF’s from college is from North Mankato, Minnesota, so that makes me like it even better!  There are really interesting flavors: sweet and salty, white cheddar, salted carmel, sweet and spicy, Boom Chicka Pop (sea salt popcorn), Boom Chicka Pop (lightly sweet popcorn), dark chocolate, white chocolate peppermint and movie theater pop.  I really want to try the dark chocolate and the white cheddar!!

Then I had some cottage cheese.

A few minutes later I chomped on some Cheez-It’s.  (Why are these so good?)

A little while later, I snacked on an apple with peanut butter.  It definitely satisfied me until dinner time.

DINNER – If  you remember, I made Skinny Taste’s chicken enchiladas.  I used bigger whole wheat tortillas this time and I have to say that I like the smaller tortillas better.  Still delicious!  And filling.  I had one and was completely full.

And then while watching Jeopardy, I drank a drink of almond milk.

I didn’t make it to the gym yesterday because I had extremely bad cramps and was quite exhausted. But, I think my eats were pretty good.  I love starting my day with a smoothie.  I will definitely be adding smoothies to my weekly routine.

Motivation Monday

Well, it’s not exactly Monday, but I still wanted to write a motivational post.  This week I’m motivated by Skinny Taste.  I seriously love this web site!  She has the best recipes around that I just adore.  Literally every single recipe that I have tried from her web site is delicious!

Tonight (Tuesday) I’m making the enchiladas from her site!  I’ve made these before, so I’m pumped!

Exactly What I Wanted

Happy Friday!!  Can you believe it’s Friday?  I’m so excited, especially because we’re going to a friend’s wedding this weekend.  I love weddings and am so excited for the two of them!

Let’s just jump into yesterday, shall we?

BREAKFAST – I had a busy morning, so I ran to Starbucks for an iced caramel maachiato with skim milk.  It’s definitely my all time favorite for when the weather is warm!  It’s so refreshing.

I also purchased a lemon loaf at Starbucks.  I was on the run and didn’t bring anything for breakfast.  And, I had a gift card!  Check yes!  According to Starbucks, the lemon loaf has 410 calories.  Yikes!  You will notice that I didn’t eat much for lunch because of this!

LUNCH – I don’t know if you can technically call what I had around lunchtime actual lunch because…well…

That’s correct, I only had a banana.  So, I suppose this would be considered a snack and not lunch.  Okay then, I had a snack of a banana.

Work was crazy, so I didn’t really get a chance to eat anything else until I got home.  And because of the lack of eating, I opted out of a work out for fear of passing out!  Listen to your body, it’s better than over doing it.

SNACK – I will call this a snack.  I came home and had an apple with peanut butter.  It’s definitely an all-time favorite.

DINNER – The positive of not working out, I got to spend some time making dinner.  On the menu, chicken, rice and bell peppers.  It’s a favorite in our household and always hits the spot.  The positive thing about this dish is that I can make a lot of it and then have leftovers.  I’m a huge fan!  I also packed my bowl with more peppers than the man, so it’s healthier, right?

It’s the Weekend!

AIt’s Friday!!!  Thank Goodness.  I am so looking forward to the weekend, you have no idea.

Before we get into what’s I’m most looking forward to this weekend, let’s dive into what happened yesterday.

I worked from home and worked through breakfast with 2 cups of coffee!  I don’t know what my problem was.

LUNCH – I use this term loosely because it was around 11 by the time I was starving.  Again, we had zero food in the house (but we did go to grocery store last night).  I really wanted something carb-loaded….so….

I devoured a perfectly proportioned peanut butter and jelly sandwich.

SNACK – I kept on being a firewoman throughout the afternoon and I using a fire extinguisher is quite exhausting.  (Okay, is that too many metaphors?)  I got pretty hungry and wanted something salty before my 3 mile run.

Some more snacks – chocolate covered Twizzlers, which weren’t that good, and a Kashi bar.

EXERCISE – I had a 3 mile run on the agenda and the weather was gorgeous.  It was about 50 degrees and the sun was out!  Time to run around the neighborhood.

I had a really good run.  I put on a fleece jacket because I needed pockets to hold my keys.  NOTE TO SELF: 50 degrees does not need fleece!

Then I came home and found a package!  Since we signed up for the Chicago Women’s Half Marathon early enough, we got a gift package, courtesy of Fleet Feet Chicago.

DINNER – We ran to the grocery store and then it was time for some dinner.  We had some elbow macaroni, andouille sausage , green pepper and my mom’s homemade spaghetti sauce.  We both enjoyed it!!

What’s on the agenda for this weekend:

  • Finshing the bottle of wine from our impromptu date on Wednesday
  • Running 4 miles Saturday morning to keep up with my training schedule
  • Watching Lincoln (hopefully).  I didn’t watch it before the Oscars but I’ve started to be really intrigued by Daniel Day Lewis.
  • Cleaning the apartment – oh man does it need some spring cleaning
  • Taking a featured exercise class on Sunday as my cross training – Ballet Body Fusion.  We’ll see how it goes, remember Chicago?
  • Being outside!  I really want to sit on the balcony, drinking coffee Look at this forecast:

Not so Mc Egg McMuffins

EThe other day I posted about how I made some homemade egg mcmuffins, inspired by this recipe from The Yummy Life.

Well, I had one yesterday morning for breakfast and I was so full until 1 in the afternoon.  This will definitely make it into the breakfast rotation.  It so easy to make!

What You’ll Need: 

  • 8 Whole Wheat English Muffins
  • 8 Organic Eggs
  • 8 Turkey Sausage Patties (I used Jennie O)
  • 8 Slices of Cheddar Cheese (I used Sargento 45 calorie slices)
  • Pam-covered muffin tin

How to Prepare:

Preheat oven to 350 degrees
Separate muffins
Add cheese
Make sausage according to package
Break eggs into muffin tin and bake for 25 – 30 minutes
Add sausage to sandwich
Add cooked eggs
Roll in wax paper and baggie
Place in freezer!
